Habemus Papam:
Varieties : 64% of old Grenache vines, 25 % Syrah, 10% Mourvèdre, 1% Counoise.
Vinification : Hand picked and sorted, whole bunch fermentation with punching down for gentle extraction.
Ageing : 18 months in casks (foudres) and terracotta jars.
Le Pied de Baud:
Varieties : 80% Grenache old vines, 15% Mourvèdre, 5% Cinsault.
Vinification : Manual picking with very selective sorting, desteming, short maceration with soft pigeages and pumping overs.
Ageing : 18 months in recent foudres and terracotta jars.
